Saturday is (beside the library sale) also St. Patrick's Day. I wish I could transport myself to St. Croix, where the most fun parade happens every year, but since that is not on line yet, I'll be here. To celebrate, I found this recipe that, even though I'm not big on beer, I have enjoyed a Guinness or two and there is always room for chocolate! But you should start quickly; it needs to be in the fridge overnight. (I have no idea where you get, or if you can get Guinness on Culebra. If someone knows, share please!)

Guinness Chocolate Cheesecake (from Closet Cooking)

One of the most decadent and creamy chocolate cheesecakes around with a hit of Guinness to enhance the chocolate flavour.

Servings: makes 6+ servings

Prep Time: 10 minutes

Cook Time: 2 hours

Ingredients

Guinness has some strange ads

1 cup graham cracker crumbs                 

2 tablespoons cocoa powder

1 tablespoon sugar

2 tablespoons butter, melted

12 ounces dark chocolate, chopped

2 tablespoons heavy cream

3 (8 ounce) packages cream cheese

1 cup sugar

1/2 cup sour cream

3 eggs

1 teaspoon vanilla extract

3/4 cup Guinness

Directions

Mix the graham cracker crumbs, cocoa powder, sugar, and butter and press into the bottom of a 9 inch spring form pan.

Melt the chocolate in the cream in a double boiler.

Cream the cream cheese.

Mix in the sugar, chocolate, sour cream, eggs, vanilla, and Guinness.

Pour the mixture into the spring form pan.

Bake in a preheated 350F oven for 60 minutes.

Turn off heat and leave cheesecake in the oven with the door slightly ajar for 60 minutes.

Let it cool completely.

Chill the cheesecake in the fridge overnight.

So wraps up another bit of housekeeping Culebra-wise. I'm shutting my eyes to my own mess!

Thursday Tidy-Up Time

Some housekeeping to attend to here:


The polls for voting in the primary (March 18th) will be opened from 8:00 to 4:00. I'll have more on locations for each when...I know them!


There won't be any Tuesday bread next week, since I forgot a project set up before there was a Tuesday bread day. Sorry about that! As the winter/spring population changes around here, I'll be making some additions to the bread line up, involving things like cinnamon and zucchini, olives and dried tomatoes (not all in the same loaf). More ahead!


I still don't know the name of that plant! Since I look at it about 50 times or more a day, it's starting to bug me (will I remember it after I learn it? what were we talking about?)


There are some really great movies lined up at the Cine. To find out more, you can check out the facebook page or get on Pam's List for announcements of upcoming movies (and a whole lot more things Culebra).

Mark your recycle/reuse/get something old new to you calendars for the week-end of the 10th. There will be a 'garage sale' to benefit the library, at, surprise! the library, Friday from 10 - 4 (this is being put together by Judy Clark - if you know Judy (ClarkAfterDark) you know the woman can put together the very coolest of reusables, if you don't know her, come see what she's got). The Sister's annual flea market will be on Saturday to benefit the families and children of Culebra. Even after reading the location, I'm not exactly sure where it's going to be, but I'll find out or some more savvy reader can let me know.

The string of pretty amazing weather days continues. With spits of rain, racing clouds and a lot of wind on and off, the sun has been pre-eminant. We're so lucky!!
