Culebra Free Range Friday (via North Carolina)

A happy Mountain brother man
Today's post is about turkey. I know, Thanksgiving is over but there is another popular turkey day coming up and that's my excuse for giving this over to my brother and his buddies Trash Can Turkey. This was only part of the meal they made, up in them thar mountains: there was duck and chicken and lots of side dishes. There was also lots of beer. But unlike the first year they tried this, the turkey turned out to be succulent, falling off the bone, literally, instead of raw.

Trash Can Turkey - Jon Stark's version with a lotta help from his friends (all photos used with permission from Jon Stark)

This is what we call "Trash Can Turkey" You put a 20 lb Turkey on a spike, cover it with spices, put a pre-seasoned trash can on top, cover with coals, and entertain yourselves for 3-4 hours

(ed. note - this is one way they entertain themselves)  (sister note - not a fan of this entertainment)
Light, drink beer for 3 (more) hours and uncover!
(Ed. note - but let us begin at the beginning)

Preparing the sacrificial stake, nice and clean
Almost looks like a solar oven on a bright day!
(ed. note -  what a bunch of redneck city boys do for fancy table settings on holidays)
If you look real close, you can imagine a tasty turkey in there!
If any of you want to try this, next time I am putting the stake through a deep foil pan to lift the Turkey with; it's so tender it's ready to fall off the bone when you lift it!
This is the Turkey, it was falling off the bone, so we ate it
And there you have it! Trash Can Turkey, straight out of North Carolina. You don't have to have a bunch of crazy guys who are mad and wonderful cooks, shooting guns, drinking beer and maybe eating entirely with their hands (ok, I made that part up) to do this. But it helps. Thanks, Jonny!

All the best in this new year on the planet! I'm so glad you were born.
Have a favorite food Friday! Do something without firearms.

  1. Look at the picture where he's lighting the charcoal. At first glance, it looked like a weird cat or dog sitting on the trash can, because of his shadow.

  2. Enjoyed this on FB. Very resourceful, and I know what fresh air does to the appetite and the taste buds. I'm considering doing a version out at our river lot. With the weather getting more and more cold and the amount of planning involved, this may have to wait until spring.
